Lamingtons

Today,we had Lamingtons for dessert. Lamingtons are an australian dessert that Grace, our au pair, taught to us. It's a sponge cake with chocolate and coconut outside. For doing it, first we needed to do the sponge cake. The next day, when the cake was cold (do not put it in the fridge), we cut it into squares and we put the melted chocolate and the coconut outside the squares. ¡It's delicious!










Here is the recipie:
Ingredients
190g  butter, softened 
1 cup (220g) sugar 
2 teaspoon vanilla 
2 1/3 cups (350g) flour
1 sachet of baking powder
1 cup (250ml) milk 
220g dark chocolate 
1 cup (250ml) cooking cream 

1 cup of grated coconut

Method
Preheat the oven to 170°C. Put some butter in a cake tin. Mix butter and sugar. Add 1 teaspoon  vanilla. Add eggs one at a time, mixing them in until completely combined. Add flour and milk, gently mixing together. Pour into tin and bake for 55-60 minutes. Cool for 5 minutes, then turn onto a plate to cool completely.
Meanwhile, stir chocolate, cream and remaining vanilla in a heatproof bowl over simmering water until smooth (don't let the bowl touch water). Spread this icing over the cake, then sprinkle top and sides with coconut.

  1. Hello Clara and Lucia. Possum Magic was one of Grace's favourite books, so I'm glad you enjoyed it too. Grace said you made the lamingtons by yourselves, which is very clever! I wish I could have tasted them.

    I hope you are enjoying having Grace stay with you - I know she is having lots of fun!

  2. Hello Tina, thank you for your comment. We liked Possum Magic very much and we learnt a lot about typical Australian fook, which we didn't know. The lamingtons were delicious, it's a pity you couldn't taste them. Another day, Grace made cupcakes for my dad's birthday and we decorated them with a different chocolate letter on top of every cake, we wrote happy birthday dad but in Spanish. We are enjoying having Grace here, we'll miss her when she goes.

  3. Hello girls! No había vuelto a entrar en vuestro blog desde que sólo estaban los dibujos hechos con paint. Ha progresado y mejorado mucho. Os animo a que sigáis con él. Tienen muy buen aspecto esos dulces típicos de Australia. A ver si cuando vengáis por Íscar nos enseñáis a hacerlos con vuestros primos. Ellos aun no conocen vuestro blog, eso creo.
